Quick White Chicken Chili Recipe

If you are a regular follower, then you know we have not been posting nearly as much as we usually do lately… Life has had its… quirks over past few months which has kept us from sharing our creations with you all. However, it also has yielded a few gems as well! Tonight I cooked up this little item. 🙂 A hearty bowl of White Chicken Chili to provide a boost of protein (meat and veggie) and like most chicken soups/chilies it will help boost immune system health!

This recipe is mild as my boys do not like spices yet… If it were just me, I would likely double many of the spices listed below to ensure it has some kick… or maybe even add some red pepper flakes. 🙂

Ingredients

  • Coconut Oil
  • 1 lb chicken breast, chopped
  • 1 medium onion, chopped
  • 1 (4 ounce) can green chilies, drained
  • 3 tablespoons wheat flour
  • 2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon white pepper
  • 1 teaspoon garlic powder (I also threw 1 garlic clove chopped in)
  • 2 (16 ounce) cans cannellini beans (White Kidney Beans)
  • 1 (14 1/2 ounce) can chicken broth

Directions

  • Put coconut oil and chicken into a pot and cook until almost all of the pink is gone for the chicken
  • Add onion to the pot and cook until onions are nearly clear
  • Add green chilies, flour, and spices and stir till completely mixed
  • Add beans, stir, and cook for two more minutes
  • Add chicken broth, stir, and cook for 10 minutes (stirring occasionally)
  • Serve as is or add cheese, sour cream, etc to your taste
