OK… So I find the best way to stay motivated in fitness is to find other motivated people on instagram and follow them… I especially like to follow people who post awesome foods that they eat so I can try them too. Today I am reposting a recipe I got from following @jazzythings (give credit where credit is due!). Of course I modified her recipe by throwing in zucchini and squash (since I can never leave a recipe alone…)
The dish is basically a throw whatever you got int he fridge type of dish, and worked especially well for a day I was NOT motivated to eat healthy or to cook… Well, that turned out to be perfect, since this dish is both easy and SUPER YUMMY!!! (With a side of healthy!)
Here it is:
- 1 lbs cut up raw chicken into small chunks
- 3 slices of torn up Ezekiel Bread (Low Sodium is preferred)
- 2 Cups of Spinach
- 1 Sliced up Zuccini
- 1 Sliced up Squash
- 1/2 Cup of Mozzarella cheese
- Lots of Onion Powder
- Lots of Garlic and Herb Mrs Dash
- 2 Cloves Minced Garlic
- Red Wine Vinegar
I just threw it all into a baking dish, stirred it up and baked at 400 degrees until the chicken was cooked through. The red wine vinegar made this whole thing smell soooo good it was hard to wait for the meal to finish cooking. My two year old loved it too and even finished before his two older brothers!
